Description
A delicious roast partridge served with a tangy red currant sauce.
Ingredients

- 2 partridges
- 1 cup red currants
- 1 cup chicken stock
- 1 tablespoon sugar
- 2 tablespoons butter
- 1 onion
- 1 sprig of thyme
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Season the partridges with salt and pepper.
- In a skillet, melt the butter and sauté the onion until soft.
- Add the partridges to the skillet and brown on all sides.
- Transfer partridges to a roasting pan.
- In the same skillet, combine red currants, sugar, chicken stock, and thyme; bring to a boil.
- Pour the mixture over the partridges and roast for about 25-30 minutes.
- Remove from the oven and let rest for a few minutes before serving.
Notes
- Ensure the partridges are properly cleaned and dried before cooking.
- Adjust the sweetness of the sauce by adding more or less sugar to your taste.
