Description

A delicious roast partridge served with a tangy red currant sauce.


Ingredients

  • 2 partridges
  • 1 cup red currants
  • 1 cup chicken stock
  • 1 tablespoon sugar
  • 2 tablespoons butter
  • 1 onion
  • 1 sprig of thyme
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the partridges with salt and pepper.
  3. In a skillet, melt the butter and sauté the onion until soft.
  4. Add the partridges to the skillet and brown on all sides.
  5. Transfer partridges to a roasting pan.
  6. In the same skillet, combine red currants, sugar, chicken stock, and thyme; bring to a boil.
  7. Pour the mixture over the partridges and roast for about 25-30 minutes.
  8. Remove from the oven and let rest for a few minutes before serving.

  • Ensure the partridges are properly cleaned and dried before cooking.
  • Adjust the sweetness of the sauce by adding more or less sugar to your taste.
