Ingredients

- 1 whole duck
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix together olive oil, garlic, rosemary, salt, and pepper.
- Rub the mixture all over the duck, including under the skin.
- Place the duck in a roasting pan and roast for approximately 2 hours or until the internal temperature reaches 165°F (75°C).
- Let the duck rest for 15 minutes before carving.
Notes
- For extra crispy skin, increase the oven temperature to 400°F (200°C) for the last 20 minutes of roasting.
- Serve with seasonal vegetables for a complete meal.
