Ingredients

  • 2 tablespoons fresh rosemary, chopped

  • 1 cup mint leaves
  • 1/2 cup sugar
  • 1/4 cup water


Instructions

  1. Rub the lamb shoulder with olive oil, rosemary, salt, and pepper.
  2. Smoke the lamb for about 3 hours at 225°F until tender.
  3. In a saucepan, combine sugar and water, bring to a boil, then add the mint leaves and simmer for 10 minutes.
  4. Strain the mixture and let it cool to form a gel.
  5. Slice the smoked lamb and serve it with the mint gel.
