Instructions
- Rub the lamb shoulder with olive oil, rosemary, salt, and pepper.
- Smoke the lamb for about 3 hours at 225°F until tender.
- In a saucepan, combine sugar and water, bring to a boil, then add the mint leaves and simmer for 10 minutes.
- Strain the mixture and let it cool to form a gel.
- Slice the smoked lamb and serve it with the mint gel.
