- 1 medium fresh pineapple
- 1 cup dark rum
- 1/2 cup brown sugar
- 1/2 teaspoon cinnamon
- 1 tablespoon butter
- 1/4 cup shredded coconut (optional)
Instructions
- Peel and core the pineapple, then cut into rings or chunks.
- In a bowl, combine the rum, brown sugar, and cinnamon.
- Soak the pineapple pieces in the rum mixture for at least 30 minutes.
- In a skillet, heat the butter over medium heat.
- Add the soaked pineapple and cook until caramelized and golden, about 5-7 minutes.
- If using, sprinkle with shredded coconut and cook for an additional 2 minutes.
- Serve warm, optionally with ice cream.

- For a non-alcoholic version, substitute rum with pineapple juice.
