Description

A delightful dessert featuring pineapple chunks soaked in rum and fried to golden perfection.


Ingredients

  • 1 medium fresh pineapple
  • 1 cup dark rum
  • 1/2 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1 tablespoon butter
  • 1/4 cup shredded coconut (optional)


Instructions

  1. Peel and core the pineapple, then cut into rings or chunks.
  2. In a bowl, combine the rum, brown sugar, and cinnamon.
  3. Soak the pineapple pieces in the rum mixture for at least 30 minutes.
  4. In a skillet, heat the butter over medium heat.
  5. Add the soaked pineapple and cook until caramelized and golden, about 5-7 minutes.
  6. If using, sprinkle with shredded coconut and cook for an additional 2 minutes.
  7. Serve warm, optionally with ice cream.
