Description

Sadza neNyama is a traditional Zimbabwean dish consisting of maize meal served with a savory beef stew.


Ingredients

  • 2 cups cornmeal
  • 4 cups water
  • 1 teaspoon salt
  • 1 pound beef chunks, diced
  • 1 tablespoon cooking oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 medium tomatoes, diced
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup beef stock or water
  • 1 tablespoon fresh parsley, chopped (optional)


Instructions

  1. Start by boiling 4 cups of water in a large saucepan. Once boiling, add the salt.
  2. Gradually whisk in the cornmeal, ensuring there are no lumps.
  3. Lower the heat and let it simmer for about 10-15 minutes, stirring often until it thickens and separates from the pot’s sides.
  4. Once done, remove from heat and cover to keep warm.
  5. In a separate skillet, heat the cooking oil over medium-high heat.
  6. Add the diced beef and sear until browned on all sides, approximately 5-7 minutes. Remove the beef and set it aside.
  7. In the same skillet, toss in the diced onion and minced garlic, cooking until the onion becomes translucent, around 3-4 minutes.
  8. Add the diced bell pepper and sauté for an additional 2 minutes.
  9. Incorporate the diced tomatoes, smoked paprika, cumin, salt, and black pepper into the skillet.
  10. Return the browned beef to the pan and add the beef stock or water.
  11. Allow the mixture to simmer, covering the skillet, for 30-40 minutes, or until the beef is tender.
  12. If you like, sprinkle in some fresh parsley just before serving.
  13. To plate, serve a generous scoop of maize mash and ladle the savory beef stew over the top.

Notes

  • For an extra kick, consider adding diced jalapeños or a dash of cayenne pepper.
  • You can also swap the beef for chicken or a plant-based protein for a unique twist.
