Description

A delicate and flavorful dish featuring halibut poached in saffron-infused tallow.


Ingredients

Scale
  • 4 fillets halibut
  • 1/2 cup tallow
  • 1 teaspoon saffron threads
  • 2 shallots, thinly sliced
  • 1/4 cup white wine
  • Salt to taste
  • Black pepper to taste


Instructions

  1. In a small saucepan, heat tallow over low heat and add saffron threads to infuse.
  2. In a skillet, add shallots and cook until translucent.
  3. Add the white wine and allow to reduce.
  4. Season halibut with salt and pepper, then carefully place in the skillet.
  5. Pour saffron tallow over halibut and cover.
  6. Poach for 10-12 minutes or until halibut is cooked through.
  7. Serve warm with a drizzle of the saffron tallow.

Notes

  • For a richer flavor, allow the tallow to cool slightly before adding saffron.
  • This dish pairs well with steamed vegetables or a fresh salad.
