Ingredients

- 4 fillets halibut
- 1/2 cup tallow
- 1 teaspoon saffron threads
- 2 shallots, thinly sliced
- 1/4 cup white wine
- Salt to taste
- Black pepper to taste
Instructions
- In a small saucepan, heat tallow over low heat and add saffron threads to infuse.
- In a skillet, add shallots and cook until translucent.
- Add the white wine and allow to reduce.
- Season halibut with salt and pepper, then carefully place in the skillet.
- Pour saffron tallow over halibut and cover.
- Poach for 10-12 minutes or until halibut is cooked through.
- Serve warm with a drizzle of the saffron tallow.
Notes
- For a richer flavor, allow the tallow to cool slightly before adding saffron.
- This dish pairs well with steamed vegetables or a fresh salad.
