- 4 quail, dressed
- 2 ripe pears, cored and sliced
- 6 tablespoons unsalted butter
- 8 fresh sage leaves
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a skillet, melt the butter over medium heat. Add the sage leaves and cook until the butter turns golden brown and fragrant.
- Season the quail with salt and pepper, then add to the skillet, cooking for about 3-4 minutes on each side.
- Transfer the quail to the oven and roast for 10 minutes.
- In the remaining butter, sauté the sliced pears until golden brown.
- Serve the quail topped with sautéed pears and drizzle with brown butter and sage.
