Description

A delicious and elegant dish featuring quail and pears, enhanced with fragrant sage and nutty brown butter.


Ingredients

  • 4 quail, dressed
  • 2 ripe pears, cored and sliced
  • 6 tablespoons unsalted butter
  • 8 fresh sage leaves
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a skillet, melt the butter over medium heat. Add the sage leaves and cook until the butter turns golden brown and fragrant.
  3. Season the quail with salt and pepper, then add to the skillet, cooking for about 3-4 minutes on each side.
  4. Transfer the quail to the oven and roast for 10 minutes.
  5. In the remaining butter, sauté the sliced pears until golden brown.
  6. Serve the quail topped with sautéed pears and drizzle with brown butter and sage.

  • Ensure quail is cooked to an internal temperature of 165°F (74°C).
