A delicious and easy recipe for sardine patties bound with egg yolk, perfect for a quick meal or snack.
Ingredients

- 2 cans sardines in olive oil
- 2 egg yolks
- 1 cup breadcrumbs
- 1 chopped onion
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1 tablespoon parsley, chopped
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup oil for frying
Instructions
- In a large mixing bowl, combine sardines, egg yolks, breadcrumbs, onion, mustard, lemon juice, parsley, salt, and pepper.
- Mix until well combined.
- Shape the mixture into patties.
- Heat oil in a skillet over medium heat.
- Fry the patties until golden brown on both sides, about 3-4 minutes per side.
- Remove from skillet and drain on paper towels.
- Serve warm.
Notes
- Can substitute fresh herbs for parsley if desired.
- Make sure to drain sardines well before mixing.
- These patties can be frozen before frying for easy meals.
