Ingredients

- 1 cup all-purpose flour
- 1 cup grated Parmesan cheese
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 2 large eggs
- 1/4 cup melted butter
- 1 cup ricotta cheese
- 1/4 cup fresh basil, chopped
- 1 tablespoon lemon juice
- 1/4 teaspoon black pepper
Instructions
- In a bowl, whisk together flour, baking powder, and salt.
- In another bowl, mix milk, eggs, and melted butter.
- Combine the wet and dry ingredients, then fold in Parmesan cheese.
- Preheat the waffle maker and pour the batter into it, cooking until golden brown.
- In a separate bowl, mix ricotta cheese, chopped basil, lemon juice, and black pepper.
- Serve the waffles by spreading the basil ricotta mousse in between two waffles.
Notes
- Feel free to add additional herbs to the ricotta mousse for extra flavor.
- These waffles can be made in advance and reheated for convenience.
