Description
A traditional Scottish fruitcake that is rich and flavorful, often enjoyed during festive occasions.
Ingredients

- 1 cup currants
- 1 cup raisins
- 1 cup mixed peel
- 1 cup sultanas
- 1 cup brown sugar
- 1 cup butter
- 4 cups all-purpose flour
- 4 eggs
- 1 tablespoon mixed spice
- 1 teaspoon baking powder
- 1 cup whisky
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, cream together the butter and brown sugar until light and fluffy.
- Beat in the eggs one at a time, mixing well after each addition.
- Stir in the whisky and mixed spice.
- In a separate bowl, combine the flour and baking powder; gradually add to the creamed mixture.
- Fold in the currants, raisins, sultanas, and mixed peel.
- Pour the batter into a greased cake tin and smooth the top.
- Bake for about 1.5 hours or until a skewer comes out clean.
- Let cool before serving.
Notes
- This cake improves with age, so it can be made a few weeks in advance.
- Wrap the cake in marzipan and icing for special occasions.
- Store in a cool, dry place.
