Description

A traditional Scottish fruitcake that is rich and flavorful, often enjoyed during festive occasions.


Ingredients

  • 1 cup currants
  • 1 cup raisins
  • 1 cup mixed peel
  • 1 cup sultanas
  • 1 cup brown sugar
  • 1 cup butter
  • 4 cups all-purpose flour
  • 4 eggs
  • 1 tablespoon mixed spice
  • 1 teaspoon baking powder
  • 1 cup whisky


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the butter and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, mixing well after each addition.
  4. Stir in the whisky and mixed spice.
  5. In a separate bowl, combine the flour and baking powder; gradually add to the creamed mixture.
  6. Fold in the currants, raisins, sultanas, and mixed peel.
  7. Pour the batter into a greased cake tin and smooth the top.
  8. Bake for about 1.5 hours or until a skewer comes out clean.
  9. Let cool before serving.

Notes

  • This cake improves with age, so it can be made a few weeks in advance.
  • Wrap the cake in marzipan and icing for special occasions.
  • Store in a cool, dry place.
