Description
Delicious seafood crepes topped with a creamy béchamel sauce.
Ingredients

- 1 cup all-purpose flour
- 2 large eggs
- 1 ½ cups milk
- ¼ teaspoon salt
- 1 tablespoon butter
- 2 cups mixed seafood (shrimp, crab, and scallops)
- ½ cup diced onions
- 2 tablespoons fresh parsley, chopped
- 2 cups béchamel sauce
- ½ cup grated cheese
Instructions
- In a mixing bowl, combine the flour, eggs, milk, and salt to create the crepe batter.
- Heat a non-stick skillet and melt the butter.
- Pour a ladleful of batter, swirling the pan to cover the bottom and cook until golden.
- Repeat until all batter is used.
- For the filling, sauté onions in a pan, then add seafood and cook until opaque.
- Mix in parsley and remove from heat.
- Fill each crepe with the seafood mixture and roll them up.
- Place crepes in a baking dish and cover with béchamel sauce.
- Sprinkle with grated cheese and bake in a preheated oven at 350°F for 20 minutes.
Notes
- For a richer flavor, add a splash of white wine to the seafood filling.
- These crepes can be made ahead of time and stored in the refrigerator.
