- 2 medium eggplants, cut into 1-inch cubes
- 3 tablespoons vegetable oil
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon chili paste (adjust to taste)
- 1 tablespoon sugar
- 1 teaspoon sesame oil
- 2 green onions, chopped
- Sesame seeds for garnish
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, toss the eggplant cubes with 2 tablespoons of vegetable oil until evenly coated. Spread the eggplant on the prepared baking sheet in a single layer.
- Roast the eggplant in the preheated oven for 25-30 minutes, or until tender and slightly caramelized, stirring halfway through for even cooking.
- While the eggplant is roasting, heat the remaining tablespoon of vegetable oil in a skillet over medium heat. Add the minced garlic and ginger, sautéing for about 1 minute until fragrant.
- Stir in the soy sauce, rice vinegar, chili paste, and sugar. Cook for an additional 2-3 minutes until the sauce thickens slightly.
- Once the eggplant is done roasting, remove it from the oven and add it to the skillet with the sauce. Toss to coat the eggplant evenly.
- Drizzle with sesame oil and sprinkle with chopped green onions and sesame seeds before serving.
Notes
- For a spicier kick, add more chili paste or include sliced fresh chilies when sautéing the garlic and ginger.
- To make this dish vegan, ensure the chili paste is free from animal products and consider serving it over steamed rice or quinoa for a complete meal.
