Description

Sichuan Chili-Garlic Eggplant Bites are a flavorful and spicy dish that will amaze your taste buds with their rich flavors and satisfying texture.


Ingredients

  • 2 medium eggplants, cut into 1-inch cubes
  • 3 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon chili paste (adjust to taste)
  • 1 tablespoon sugar
  • 1 teaspoon sesame oil
  • 2 green onions, chopped
  • Sesame seeds for garnish


Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss the eggplant cubes with 2 tablespoons of vegetable oil until evenly coated. Spread the eggplant on the prepared baking sheet in a single layer.
  3. Roast the eggplant in the preheated oven for 25-30 minutes, or until tender and slightly caramelized, stirring halfway through for even cooking.
  4. While the eggplant is roasting, heat the remaining tablespoon of vegetable oil in a skillet over medium heat. Add the minced garlic and ginger, sautéing for about 1 minute until fragrant.
  5. Stir in the soy sauce, rice vinegar, chili paste, and sugar. Cook for an additional 2-3 minutes until the sauce thickens slightly.
  6. Once the eggplant is done roasting, remove it from the oven and add it to the skillet with the sauce. Toss to coat the eggplant evenly.
  7. Drizzle with sesame oil and sprinkle with chopped green onions and sesame seeds before serving.

Notes

  • For a spicier kick, add more chili paste or include sliced fresh chilies when sautéing the garlic and ginger.
