These pistachio pudding cookies are soft, chewy, and loaded with flavor!


Ingredients

  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 package (3.4 oz) instant pistachio pudding mix
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped pistachios


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until smooth.
  3. Add the pistachio pudding mix, eggs, and vanilla; mix well.
  4. Combine the flour, baking soda, and salt; gradually stir into the creamed mixture.
  5. Fold in the chopped pistachios.
  6. Drop by rounded tablespoonfuls onto ungreased baking sheets.
  7. Bake for 10-12 minutes or until the edges start to turn golden brown.
  8. Let cool on baking sheets for a few minutes before transferring to wire racks to cool completely.
