Ingredients
Scale
- 1 lamb heart
- 1 tablespoon smoked salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Preheat sous vide water bath to 140°F (60°C).
- Clean the lamb heart and remove any fat or connective tissue.
- Season with smoked salt and black pepper.
- Vacuum seal the lamb heart with olive oil.
- Submerge in the water bath and cook for 2 hours.
- After cooking, remove from the bag and sear in a hot pan for 1-2 minutes on each side.
- Slice and serve.
Notes
- Ensure the lamb heart is fully cleaned before cooking.
- Adjust the seasoning to taste.
- Rest the heart for a few minutes after searing before slicing.
