Description

A unique and delicious preparation of lamb heart using sous vide cooking and smoked salt.


Ingredients

Scale
  • 1 lamb heart
  • 1 tablespoon smoked salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil


Instructions

  1. Preheat sous vide water bath to 140°F (60°C).
  2. Clean the lamb heart and remove any fat or connective tissue.
  3. Season with smoked salt and black pepper.
  4. Vacuum seal the lamb heart with olive oil.
  5. Submerge in the water bath and cook for 2 hours.
  6. After cooking, remove from the bag and sear in a hot pan for 1-2 minutes on each side.
  7. Slice and serve.

Notes

  • Ensure the lamb heart is fully cleaned before cooking.
  • Adjust the seasoning to taste.
  • Rest the heart for a few minutes after searing before slicing.
