Description

A warm and comforting soup that combines apples and spices for a delightful flavor.


Ingredients

  • 5 cups apple juice
  • 3 cups chopped apples
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon cayenne pepper
  • 1 tablespoon lemon juice
  • 1 tablespoon honey
  • 1/4 cup chopped onions
  • 2 tablespoons butter


Instructions

  1. In a large pot, melt butter over medium heat. Add onions and sauté until soft.
  2. Add chopped apples, apple juice, cinnamon, nutmeg, cayenne, lemon juice, and honey. Bring to a boil.
  3. Reduce heat and simmer for 20 minutes, or until apples are tender.
  4. Blend the soup until smooth using an immersion blender or in batches in a regular blender.
  5. Serve hot, optionally garnished with a sprinkle of cinnamon.

Notes

  • For a smoother texture, blend longer.
  • Adjust the spices according to your preference for heat.
  • This soup can be served chilled as well.
