Ingredients

- 5 cups apple juice
- 3 cups chopped apples
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon cayenne pepper
- 1 tablespoon lemon juice
- 1 tablespoon honey
- 1/4 cup chopped onions
- 2 tablespoons butter
Instructions
- In a large pot, melt butter over medium heat. Add onions and sauté until soft.
- Add chopped apples, apple juice, cinnamon, nutmeg, cayenne, lemon juice, and honey. Bring to a boil.
- Reduce heat and simmer for 20 minutes, or until apples are tender.
- Blend the soup until smooth using an immersion blender or in batches in a regular blender.
- Serve hot, optionally garnished with a sprinkle of cinnamon.
Notes
- For a smoother texture, blend longer.
- Adjust the spices according to your preference for heat.
- This soup can be served chilled as well.
