Description

Delicious and nutritious spinach tortillas that are perfect for wraps and quesadillas.


Ingredients

  • 2 cups fresh spinach
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 3/4 cup water
  • 2 tablespoons olive oil


Instructions

  1. In a blender, combine spinach and water, and blend until smooth.
  2. In a mixing bowl, combine flour and salt.
  3. Add the spinach mixture and olive oil to the flour and mix until a dough forms.
  4. Knead the dough for a few minutes until smooth.
  5. Divide the dough into small balls and roll each out into a thin circle.
  6. Heat a skillet over medium heat and cook each tortilla for about a minute on each side.
  7. Remove from skillet and keep warm in a towel.

Notes

  • These tortillas can be frozen and reheated easily.
  • Experiment with adding different spices for added flavor.
