Delicious and nutritious spinach tortillas that are perfect for wraps and quesadillas.
Ingredients

- 2 cups fresh spinach
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 3/4 cup water
- 2 tablespoons olive oil
Instructions
- In a blender, combine spinach and water, and blend until smooth.
- In a mixing bowl, combine flour and salt.
- Add the spinach mixture and olive oil to the flour and mix until a dough forms.
- Knead the dough for a few minutes until smooth.
- Divide the dough into small balls and roll each out into a thin circle.
- Heat a skillet over medium heat and cook each tortilla for about a minute on each side.
- Remove from skillet and keep warm in a towel.
Notes
- These tortillas can be frozen and reheated easily.
- Experiment with adding different spices for added flavor.
