Description

A delicious and unique jam made from braised oxtail, enhanced with the aromatic flavors of star anise.


Ingredients

Scale
  • 2 pounds oxtail
  • 4 star anise
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon black peppercorns
  • 1 cup red wine
  • 1 cup beef broth
  • 1/4 cup brown sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon apple cider vinegar


Instructions

  1. Preheat the oven to 300°F (150°C).
  2. In a large Dutch oven, heat oil over medium-high heat and brown the oxtail on all sides.
  3. Remove the oxtail and add onion, garlic, and peppercorns; sauté until softened.
  4. Return the oxtail to the pot, adding star anise, wine, broth, brown sugar, soy sauce, and vinegar.
  5. Bring to a simmer, cover, and transfer to the oven.
  6. Braise for 3 hours, until the meat is tender and falling off the bone.
  7. Remove oxtail, shred the meat, and reduce the braising liquid on the stovetop until thickened.
  8. Mix shredded meat with the reduced liquid and store in jars.

  • Make sure to strain the liquid before reducing for a smoother texture.
