Description
A delicious and unique jam made from braised oxtail, enhanced with the aromatic flavors of star anise.
Ingredients

- 2 pounds oxtail
- 4 star anise
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 teaspoon black peppercorns
- 1 cup red wine
- 1 cup beef broth
- 1/4 cup brown sugar
- 2 tablespoons soy sauce
- 1 tablespoon apple cider vinegar
Instructions
- Preheat the oven to 300°F (150°C).
- In a large Dutch oven, heat oil over medium-high heat and brown the oxtail on all sides.
- Remove the oxtail and add onion, garlic, and peppercorns; sauté until softened.
- Return the oxtail to the pot, adding star anise, wine, broth, brown sugar, soy sauce, and vinegar.
- Bring to a simmer, cover, and transfer to the oven.
- Braise for 3 hours, until the meat is tender and falling off the bone.
- Remove oxtail, shred the meat, and reduce the braising liquid on the stovetop until thickened.
- Mix shredded meat with the reduced liquid and store in jars.
Notes
- This jam works great as a spread or a condiment.
- Make sure to strain the liquid before reducing for a smoother texture.
