Description

A deliciously moist and sweet coconut cake topped with a rich coconut glaze.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsweetened coconut milk
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup shredded coconut


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a cake pan.
  2. In a large bowl, mix flour, sugar, baking powder, and salt.
  3. In another bowl, combine coconut milk, oil, eggs, and vanilla.
  4. Combine wet and dry ingredients until just mixed, then fold in shredded coconut.
  5. Pour the batter into the prepared pan and bake for 30-35 minutes.
  6. Let cool before adding the coconut glaze.

Notes

  • Use fresh shredded coconut for better flavor.
  • Adjust the sweetness by adding more or less sugar based on personal preference.
