- 1/2 cup aquafaba (chickpea brine)
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
Instructions
- In a blender, puree the strawberries until smooth.
- In a large bowl, whip the aquafaba using an electric mixer until stiff peaks form.
- Gradually add powdered sugar, continuing to whip until well combined.
- Gently fold in the strawberry puree, vanilla extract, and lemon juice until fully incorporated.
- Transfer the mousse to serving dishes and refrigerate for at least 1 hour before serving.
Notes
- Ensure to use the aquafaba from canned chickpeas for the best results.
