Description

A delightful pound cake inspired by the classic strawberry milkshake, moist and flavored with fresh strawberries.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup whole milk
  • 1 cup fresh strawberries, pureed
  • 1/2 cup powdered sugar (for glaze)
  • 1 tablespoon milk (for glaze)


Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.
  2. In a bowl, mix flour, baking powder, and salt.
  3. In another bowl, cream together butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla and strawberry puree.
  5. Gradually add the dry ingredients to the creamed mixture, alternating with milk, ending with dry ingredients.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 60-65 minutes or until a toothpick comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. For the glaze, mix powdered sugar and milk until smooth, then drizzle over the cooled cake.

  • For best results, use fresh, ripe strawberries.
