A delightful pound cake inspired by the classic strawberry milkshake, moist and flavored with fresh strawberries.

- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup whole milk
- 1 cup fresh strawberries, pureed
- 1/2 cup powdered sugar (for glaze)
- 1 tablespoon milk (for glaze)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.
- In a bowl, mix flour, baking powder, and salt.
- In another bowl, cream together butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla and strawberry puree.
- Gradually add the dry ingredients to the creamed mixture, alternating with milk, ending with dry ingredients.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 60-65 minutes or until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- For the glaze, mix powdered sugar and milk until smooth, then drizzle over the cooled cake.
Notes
- For best results, use fresh, ripe strawberries.
- This cake can be stored in an airtight container for up to 3 days.
