Description

These delicious strawberry rhubarb bars are a perfect combination of sweet and tart flavors.


Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup butter, softened
  • 1/2 teaspoon salt
  • 2 cups chopped rhubarb
  • 1 cup diced strawberries
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, oats, brown sugar, and salt.
  3. Add softened butter and mix until crumbly.
  4. Press half of the mixture into the bottom of a greased baking pan.
  5. In another bowl, mix rhubarb, strawberries, granulated sugar, and cornstarch; pour over the crust.
  6. Sprinkle the remaining crumble mixture on top.
  7. Bake for 35-40 minutes or until top is golden brown.
  8. Allow to cool before cutting into bars.

Notes

  • For a sweeter version, add more sugar to the fruit mixture.
  • These bars can be served warm or cold.
