These delicious strawberry rhubarb bars are a perfect combination of sweet and tart flavors.
Ingredients

- 1 cup all-purpose flour
- 1/2 cup rolled oats
- 1/2 cup brown sugar
- 1/2 cup butter, softened
- 1/2 teaspoon salt
- 2 cups chopped rhubarb
- 1 cup diced strawberries
- 1/2 cup granulated sugar
- 2 tablespoons cornstarch
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine flour, oats, brown sugar, and salt.
- Add softened butter and mix until crumbly.
- Press half of the mixture into the bottom of a greased baking pan.
- In another bowl, mix rhubarb, strawberries, granulated sugar, and cornstarch; pour over the crust.
- Sprinkle the remaining crumble mixture on top.
- Bake for 35-40 minutes or until top is golden brown.
- Allow to cool before cutting into bars.
Notes
- For a sweeter version, add more sugar to the fruit mixture.
- These bars can be served warm or cold.
