- 2 pounds turkey breast, boneless and skinless
- 1 cup fresh spinach, chopped
- 1/2 cup dried cranberries, chopped
- 1/2 cup cream cheese, softened
- 1/4 cup walnuts, chopped
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix spinach, cranberries, cream cheese, walnuts, garlic powder, onion powder, salt, and pepper.
- Flatten the turkey breast using a meat mallet.
- Spread the filling evenly over the turkey breast.
- Roll the turkey breast tightly and secure with kitchen twine.
- Heat olive oil in a skillet over medium heat and sear the rolled turkey on all sides.
- Transfer to the oven and bake for 25-30 minutes, or until the internal temperature reaches 165°F (74°C).
- Let rest for 10 minutes before slicing.
Notes
- For extra flavor, marinate the turkey overnight.
- Serve with cranberry sauce for added sweetness.
