- 1 cup mashed sweet potatoes
- 1/2 cup almond butter
- 1/4 cup maple syrup
- 1/4 cup cocoa powder
- 1/2 cup almond flour
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup walnuts, chopped
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
- In a large bowl, mix together the mashed sweet potatoes, almond butter, maple syrup, and vanilla extract until smooth.
- Add in the cocoa powder, almond flour, baking soda, and salt, and stir until well combined.
- Fold in the chopped walnuts.
- Pour the batter into the prepared baking dish and spread evenly.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool before slicing into squares.
Notes
- Store leftover brownies in an airtight container in the refrigerator for up to a week.
- For an even richer flavor, add a pinch of cinnamon to the batter.
