Description

Delicious and decadent brownies made with sweet potatoes for a healthier twist on a classic dessert.


Ingredients

  • 1 cup mashed sweet potatoes
  • 1/2 cup almond butter
  • 1/4 cup maple syrup
  • 1/4 cup cocoa powder
  • 1/2 cup almond flour
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup walnuts, chopped


Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
  2. In a large bowl, mix together the mashed sweet potatoes, almond butter, maple syrup, and vanilla extract until smooth.
  3. Add in the cocoa powder, almond flour, baking soda, and salt, and stir until well combined.
  4. Fold in the chopped walnuts.
  5. Pour the batter into the prepared baking dish and spread evenly.
  6. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow to cool before slicing into squares.

Notes

  • Store leftover brownies in an airtight container in the refrigerator for up to a week.
  • For an even richer flavor, add a pinch of cinnamon to the batter.
