  • Salt and freshly ground black pepper to taste

Instructions

  1. Start by placing the diced sweet potatoes in a large saucepan filled with water. Bring the water to a rolling boil and let the sweet potatoes cook until they are fork-tender, which should take around 15-20 minutes. Once done, drain the water and set the sweet potatoes aside.
  2. In the same pot, combine the sweet potatoes with the roasted peanuts, coconut milk, olive oil, garlic powder, cumin, salt, and pepper.
  3. Using a sturdy fork or a potato masher, blend the ingredients together until you achieve a smooth and creamy texture. Taste the mixture and adjust the seasoning as needed.
  4. If you prefer a creamier consistency, gradually stir in additional coconut milk, one tablespoon at a time, until you reach your desired creaminess.
  5. Serve the mash warm, and if you like, sprinkle with freshly chopped cilantro for an added burst of flavor.
