- 2 medium sweet potatoes, diced
- 1 tablespoon olive oil
- 1 bell pepper, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 eggs (optional)
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the diced sweet potatoes and cook until tender, about 10-15 minutes.
- Add the bell pepper, onion, and garlic; sauté until the vegetables are soft.
- Stir in the paprika, salt, and pepper.
- If using, create two wells in the hash and crack an egg into each well. Cover and cook until the eggs are set.
- Serve warm.
