Description

A delicious and hearty sweet potato hash perfect for breakfast or brunch.


Ingredients

Scale
  • 2 medium sweet potatoes, diced
  • 1 tablespoon olive oil
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 eggs (optional)


Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced sweet potatoes and cook until tender, about 10-15 minutes.
  3. Add the bell pepper, onion, and garlic; sauté until the vegetables are soft.
  4. Stir in the paprika, salt, and pepper.
  5. If using, create two wells in the hash and crack an egg into each well. Cover and cook until the eggs are set.
  6. Serve warm.
