Ingredients

- 1 cup cooked chickpeas
- 1/2 cup tahini
- 1/4 cup lemon juice
- 2 cloves garlic
- 1/2 cup parsley, finely chopped
- 1/4 cup tomatoes, diced
- 1/4 cup cucumber, diced
- 1/4 cup green onions, sliced
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Instructions
- In a food processor, blend the chickpeas, tahini, lemon juice, and garlic until smooth.
- Transfer to a bowl and mix in the parsley, tomatoes, cucumber, and green onions.
- Season with salt and pepper to taste.
- Serve with pita chips or fresh vegetables.
Notes
- For a spicier dip, add a pinch of cayenne pepper.
- Can be stored in the refrigerator for up to 3 days.
