- 1 cup vital wheat gluten
- 1/4 cup nutritional yeast
- 1/4 cup finely chopped walnuts
- 2 tablespoons smoked paprika
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon black pepper
- 1/2 teaspoon cayenne pepper
- 1/4 cup soy sauce
- 1/4 cup vegetable broth
- 2 tablespoons olive oil
- 1 teaspoon liquid smoke
Instructions
- In a large bowl, combine vital wheat gluten, nutritional yeast, walnuts, smoked paprika, garlic powder, onion powder, black pepper, and cayenne pepper.
- In a separate bowl, mix soy sauce, vegetable broth, olive oil, and liquid smoke.
- Pour the wet ingredients into the dry ingredients and stir until combined.
- Knead the mixture for 3-5 minutes until it becomes elastic.
- Shape the dough into a log and wrap it tightly in foil.
- Steam the wrapped log for 30-40 minutes or until firm.
- Allow it to cool before slicing and serving.
Notes
- For a spicier salami, add more cayenne pepper.
- This salami can be stored in the fridge for up to a week.
