Description

This Tasty Homemade Vegan Salami is a delicious and satisfying plant-based alternative that is easy to make and great for sandwiches, charcuterie boards, or on its own.


Ingredients

  • 1 cup vital wheat gluten
  • 1/4 cup nutritional yeast
  • 1/4 cup finely chopped walnuts
  • 2 tablespoons smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper
  • 1/4 cup soy sauce
  • 1/4 cup vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon liquid smoke


Instructions

  1. In a large bowl, combine vital wheat gluten, nutritional yeast, walnuts, smoked paprika, garlic powder, onion powder, black pepper, and cayenne pepper.
  2. In a separate bowl, mix soy sauce, vegetable broth, olive oil, and liquid smoke.
  3. Pour the wet ingredients into the dry ingredients and stir until combined.
  4. Knead the mixture for 3-5 minutes until it becomes elastic.
  5. Shape the dough into a log and wrap it tightly in foil.
  6. Steam the wrapped log for 30-40 minutes or until firm.
  7. Allow it to cool before slicing and serving.

Notes

  • For a spicier salami, add more cayenne pepper.
  • This salami can be stored in the fridge for up to a week.
