Ingredients

- 2 cups heavy cream
- 1 cup brewed Thai tea
- 6 egg yolks
- 3/4 cup sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 cup sugar (for caramelizing)
Instructions
- Preheat your oven to 325°F (160°C).
- In a saucepan, heat the heavy cream and brewed Thai tea until just simmering.
- In a bowl, whisk together the egg yolks, sugar, vanilla extract, and salt.
- Slowly pour the hot cream mixture into the egg yolk mixture, whisking constantly.
- Strain the mixture through a fine sieve into ramekins.
- Place the ramekins in a baking dish and fill the dish with hot water halfway up the sides of the ramekins.
- Bake for 30-35 minutes until set.
- Chill in the refrigerator for at least 2 hours.
- Before serving, sprinkle sugar on top and use a kitchen torch to caramelize.
