Description

A delightful fusion of classic creme brulee and the unique flavor of Thai tea, this dessert is sure to impress!


Ingredients

Scale
  • 2 cups heavy cream
  • 1 cup brewed Thai tea
  • 6 egg yolks
  • 3/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup sugar (for caramelizing)


Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a saucepan, heat the heavy cream and brewed Thai tea until just simmering.
  3. In a bowl, whisk together the egg yolks, sugar, vanilla extract, and salt.
  4. Slowly pour the hot cream mixture into the egg yolk mixture, whisking constantly.
  5. Strain the mixture through a fine sieve into ramekins.
  6. Place the ramekins in a baking dish and fill the dish with hot water halfway up the sides of the ramekins.
  7. Bake for 30-35 minutes until set.
  8. Chill in the refrigerator for at least 2 hours.
  9. Before serving, sprinkle sugar on top and use a kitchen torch to caramelize.
