Ingredients

  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons lemon zest
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup fresh raspberries


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla and lemon zest.
  4. Combine the flour, baking soda, and salt; gradually stir into the creamed mixture.
  5. Gently fold in the raspberries.
  6. Drop by rounded tablespoon onto ungreased cookie sheets.
  7. Bake for 10-12 minutes in the preheated oven, or until edges are lightly golden.
  8. Let cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.
