- 2 cups cooked lobster meat, chopped
- 1 cup frozen peas
- 1 cup carrots, diced
- 1/2 cup celery, chopped
- 1/2 cup onion, chopped
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 1 1/2 cups lobster stock
- 1/2 cup heavy cream
- 1 teaspoon Old Bay seasoning
- 1 refrigerated pie crust
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, melt butter over medium heat. Add onion, celery, and carrots; cook until softened.
- Stir in flour and cook for 1 minute.
- Add lobster stock and heavy cream, bringing to a simmer.
- Mix in lobster meat and peas, along with Old Bay seasoning, and remove from heat.
- Pour the mixture into a pie dish and cover with the pie crust.
- Cut slits in the top crust and bake for 30-35 minutes until golden brown.
