Description

A rich and creamy lobster pot pie topped with flaky pastry is the ultimate comfort food.


Ingredients

  • 2 cups cooked lobster meat, chopped
  • 1 cup frozen peas
  • 1 cup carrots, diced
  • 1/2 cup celery, chopped
  • 1/2 cup onion, chopped
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1 1/2 cups lobster stock
  • 1/2 cup heavy cream
  • 1 teaspoon Old Bay seasoning
  • 1 refrigerated pie crust


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, melt butter over medium heat. Add onion, celery, and carrots; cook until softened.
  3. Stir in flour and cook for 1 minute.
  4. Add lobster stock and heavy cream, bringing to a simmer.
  5. Mix in lobster meat and peas, along with Old Bay seasoning, and remove from heat.
  6. Pour the mixture into a pie dish and cover with the pie crust.
  7. Cut slits in the top crust and bake for 30-35 minutes until golden brown.
