Description

A classic dessert perfect for the festive season, featuring a rich plum pudding served with a luxurious brandy butter sauce.


Ingredients

  • 1 cup dried plums, chopped
  • 1 cup dark raisins
  • 1 cup currants
  • 1/2 cup mixed candied peel
  • 1/2 cup chopped nuts
  • 1/2 cup breadcrumbs
  • 1/2 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon allspice
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup brandy
  • 3 large eggs


Instructions

  1. In a large bowl, combine all the dried fruits, candied peel, and nuts.
  2. Add breadcrumbs, brown sugar, and all the spices. Mix well.
  3. In another bowl, whisk together the milk, brandy, and eggs.
  4. Pour the wet mixture into the dry ingredients and stir until fully combined.
  5. Grease a pudding mold and pour the mixture into it.
  6. Cover the mold with parchment paper and steam for about 6 hours.
  7. Allow to cool before removing from the mold.
  8. To make the brandy butter sauce, blend softened butter with powdered sugar and add brandy to taste.
  9. Serve slices of plum pudding warm with brandy butter sauce.

Notes

  • Soaking the dried fruits in brandy overnight enhances the flavor.
  • This pudding can be made ahead and reheated before serving.
