- 1 pound turkey breast
- 4 cups chicken broth
- 2 cups water
- 2 ounces ramen noodles
- 1 tablespoon soy sauce
- 2 cloves garlic, minced
- 1 inch ginger, sliced
- 1 green onion, chopped
- 2 boiled eggs
- 1 cup bok choy, chopped
Instructions
- In a large pot, bring the chicken broth and water to a boil.
- Add the turkey breast, soy sauce, garlic, and ginger.
- Simmer until the turkey is cooked through, about 20 minutes.
- Remove the turkey, shred it, and return to the pot.
- Add the ramen noodles and bok choy to the broth; cook for another 4-5 minutes.
- Serve hot, topped with chopped green onions and sliced boiled eggs.
Notes
- For a spicier version, add chili oil before serving.
- Leftovers can be stored in the refrigerator for up to 3 days.
