Description

Deliciously unique Christmas cookies with a twist of almond and citrus flavors, perfect for the holiday season.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 cup almond flour
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon citrus zest (lemon or orange)
  • 1/4 cup citrus juice (lemon or orange)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup almond slivers for decoration


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, cream together the butter and powdered sugar until fluffy.
  3. Add the egg, vanilla extract, citrus zest, and citrus juice; mix well.
  4. In another bowl, whisk together the all-purpose flour, almond flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Shape the dough into small balls and place them on a baking sheet lined with parchment paper.
  7. Flatten each ball slightly and sprinkle almond slivers on top.
  8. Bake for 10-12 minutes or until the edges are lightly golden.
  9. Allow to cool before icing.
  10. For icing, mix powdered sugar with citrus juice until desired consistency is reached, then drizzle over cooled cookies.
