- 1 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 1/2 cup almond flour
- 1 large egg
- 1 teaspoon vanilla extract
- 1 tablespoon citrus zest (lemon or orange)
- 1/4 cup citrus juice (lemon or orange)
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup almond slivers for decoration
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, cream together the butter and powdered sugar until fluffy.
- Add the egg, vanilla extract, citrus zest, and citrus juice; mix well.
- In another bowl, whisk together the all-purpose flour, almond flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Shape the dough into small balls and place them on a baking sheet lined with parchment paper.
- Flatten each ball slightly and sprinkle almond slivers on top.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow to cool before icing.
- For icing, mix powdered sugar with citrus juice until desired consistency is reached, then drizzle over cooled cookies.
Notes
- These cookies can be stored in an airtight container for up to a week.
- For a more intense citrus flavor, consider adding more zest to the icing.
