- 2 cups tomato puree
- 1 cup heavy cream
- 1/2 cup sugar
- 1 tablespoon gelatin
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon olive oil
- Fresh basil leaves for garnish
Instructions
- In a saucepan, combine the tomato puree, sugar, salt, and pepper. Heat gently until the sugar dissolves.
- In a separate bowl, sprinkle the gelatin over 1/4 cup cold water and let it bloom for 5 minutes.
- Remove the tomato mixture from heat and stir in the bloomed gelatin until dissolved.
- Pour the mixture into a bowl and let it cool slightly, then whisk in the heavy cream and olive oil.
- Transfer to serving cups and refrigerate for at least 4 hours, or until set.
- Serve chilled, garnished with fresh basil leaves.
Notes
- Make sure the gelatin is fully dissolved for a smooth texture.
- For a sweeter dessert, adjust the sugar according to taste.
- This panna cotta can be made a day ahead and stored in the refrigerator.
