Ingredients

- 1 cup dragon fruit puree
- 1 cup cashews, soaked
- 1/2 cup coconut cream
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1 cup rolled oats
- 1/4 cup almond flour
- 1/4 cup coconut oil, melted
Instructions
- Preheat oven to 350°F (175°C).
- Blend the oats and almond flour together in a bowl.
- Add melted coconut oil and mix until combined.
- Press the mixture into a lined baking pan.
- Blend the soaked cashews, dragon fruit puree, coconut cream, maple syrup, and vanilla extract until smooth.
- Pour the filling over the crust and spread evenly.
- Bake for 25-30 minutes or until set.
- Allow to cool, then refrigerate for at least 4 hours before slicing.
Notes
- For best texture, soak cashews in water for at least 4 hours.
- Can be stored in an airtight container in the refrigerator for up to a week.
- Top with fresh dragon fruit or berries for extra flavor.
