Description

A delicious and moist vegan cake featuring the tropical flavors of mango and coconut.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 cup coconut milk
  • 1/2 cup mango puree
  • 1/4 cup vegetable oil
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1/4 cup shredded coconut


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, combine the coconut milk, mango puree, oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Add shredded coconut and gently fold in.
  6. Pour the batter into a greased cake pan and smooth the top.
  7. Bake for 30-35 minutes or until a toothpick comes out clean.
  8. Let the cake cool before serving.
