- 2 cups all-purpose flour
- 1 cup sugar
- 1 cup coconut milk
- 1/2 cup mango puree
- 1/4 cup vegetable oil
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 tsp vanilla extract
- 1/4 cup shredded coconut
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, combine the coconut milk, mango puree, oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Add shredded coconut and gently fold in.
- Pour the batter into a greased cake pan and smooth the top.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Let the cake cool before serving.
Notes
- Store leftovers in an airtight container to keep the cake moist.
- For added flavor, frost with coconut cream.
