Ingredients

  • 1 cup coconut milk
  • 1 cup mango puree
  • 1/2 cup sugar
  • 1/4 cup coconut oil
  • 1 tablespoon baking powder

  • 1/2 cup shredded coconut


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a cake pan.
  2. In a large bowl, mix the dry ingredients: flour, sugar, baking powder, and salt.
  3. In another bowl, combine coconut milk, mango puree, coconut oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fold in the shredded coconut.
  6. Transfer the batter to the greased cake pan and smooth the top.
  7. Bake for 25-30 minutes or until a toothpick comes out clean.
