Ingredients

- 1 cup almond flour
- 1/4 cup maple syrup
- 1/4 cup coconut oil
- 2 tablespoons matcha powder
- 1/2 cup medjool dates, pitted
- 1/4 cup peanut butter
- 1/4 cup coconut milk
- 1/4 teaspoon sea salt
- 1/2 cup dark chocolate, dairy-free
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix almond flour, maple syrup, and melted coconut oil until a dough forms.
- Press the dough into the bottom of a lined baking pan and bake for 10-12 minutes.
- Blend medjool dates, peanut butter, coconut milk, sea salt, and matcha powder until smooth to make the caramel layer.
- Spread the matcha caramel over the baked base and freeze for 30 minutes.
- Melt the dark chocolate and pour over the caramel layer.
- Chill until set, then slice into bars.
Notes
- Store in the refrigerator for up to a week.
- For a nuttier flavor, add chopped nuts to the base.
