Description

A delicious and visually stunning dish made with layers of fresh vegetables.


Ingredients

Scale
  • 2 cups zucchini, thinly sliced
  • 2 cups yellow squash, thinly sliced
  • 2 cups eggplant, thinly sliced
  • 2 cups tomatoes, thinly sliced
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Using a skillet, heat the olive oil and sauté the garlic until fragrant.
  3. In a circular baking dish, arrange the sliced vegetables in an overlapping pattern.
  4. Drizzle the sautéed garlic and remaining olive oil over the arranged vegetables.
  5. Sprinkle with thyme, salt, and pepper.
  6. Cover with foil and bake for 30 minutes.
  7. Remove the foil and bake for an additional 15-20 minutes until the vegetables are tender.
