Ingredients

- 2 cups zucchini, thinly sliced
- 2 cups yellow squash, thinly sliced
- 2 cups eggplant, thinly sliced
- 2 cups tomatoes, thinly sliced
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat the oven to 375°F (190°C).
- Using a skillet, heat the olive oil and sauté the garlic until fragrant.
- In a circular baking dish, arrange the sliced vegetables in an overlapping pattern.
- Drizzle the sautéed garlic and remaining olive oil over the arranged vegetables.
- Sprinkle with thyme, salt, and pepper.
- Cover with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15-20 minutes until the vegetables are tender.
