Description
A delicious and hearty vegetarian pie made with mushrooms and leeks, encased in a flaky pastry.
Ingredients

- 2 cups mushrooms, sliced
- 1 cup leeks, sliced
- 1 tablespoon olive oil
- 1 teaspoon thyme
- 1 tablespoon flour
- 1 cup vegetable broth
- 1 tablespoon soy sauce
- 1 tablespoon cream (or plant-based alternative)
- 1 sheet of puff pastry
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a pan, heat olive oil over medium heat and sauté leeks until soft.
- Add mushrooms and thyme, cooking until mushrooms are tender.
- Stir in the flour and cook for 1 minute.
- Add vegetable broth and soy sauce, stirring until thickened.
- Remove from heat and stir in cream.
- Roll out the pastry dough in a pie dish.
- Pour the mushroom mixture into the pastry.
- Cover with another pastry sheet, seal edges and make slits on top.
- Bake for 25-30 minutes or until golden brown.
Notes
- For a gluten-free version, use gluten-free flour and pastry.
- Feel free to add other vegetables according to your preference.
