Description

A delicious and hearty vegetarian pie made with mushrooms and leeks, encased in a flaky pastry.


Ingredients

Scale
  • 2 cups mushrooms, sliced
  • 1 cup leeks, sliced
  • 1 tablespoon olive oil
  • 1 teaspoon thyme
  • 1 tablespoon flour
  • 1 cup vegetable broth
  • 1 tablespoon soy sauce
  • 1 tablespoon cream (or plant-based alternative)
  • 1 sheet of puff pastry
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a pan, heat olive oil over medium heat and sauté leeks until soft.
  3. Add mushrooms and thyme, cooking until mushrooms are tender.
  4. Stir in the flour and cook for 1 minute.
  5. Add vegetable broth and soy sauce, stirring until thickened.
  6. Remove from heat and stir in cream.
  7. Roll out the pastry dough in a pie dish.
  8. Pour the mushroom mixture into the pastry.
  9. Cover with another pastry sheet, seal edges and make slits on top.
  10. Bake for 25-30 minutes or until golden brown.

Notes

  • For a gluten-free version, use gluten-free flour and pastry.
  • Feel free to add other vegetables according to your preference.
