Description
A hearty and flavorful stew made with a variety of root vegetables, ideal for warming up on a cold day.
Ingredients

- 2 cups diced carrots
- 2 cups diced potatoes
- 1 cup diced parsnips
- 1 cup diced turnips
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 tablespoon olive oil
- Salt to taste
- Pepper to taste
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic, sauté until softened.
- Add all of the diced root vegetables to the pot.
- Pour in the vegetable broth and add the thyme, rosemary, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for about 30 minutes or until the vegetables are tender.
- Adjust seasoning as needed and serve hot.
