A delicious and hearty Warm Potato Salad with Spring Onion & Mustard Dressing, perfect for any occasion.
Ingredients

- 2 pounds baby potatoes, halved
- 1/4 cup olive oil
- 2 tablespoons Dijon mustard
- 2 tablespoons apple cider vinegar
- 1 teaspoon honey
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup spring onions, chopped
- 1/4 cup fresh parsley, chopped
Instructions
- In a large pot, bring salted water to a boil. Add the halved baby potatoes and cook until tender, about 15-20 minutes. Drain and let cool slightly.
- While the potatoes are cooking, in a small bowl, whisk together the olive oil, Dijon mustard, apple cider vinegar, honey, salt, and black pepper until well combined.
- In a large mixing bowl, combine the warm potatoes with the chopped spring onions and parsley.
- Pour the mustard dressing over the potato mixture and gently toss until the potatoes are well coated.
- Serve the salad warm, garnished with additional parsley if desired.
Notes
- For a creamier texture, add 1/4 cup of sour cream or Greek yogurt to the dressing.
- To add a bit of crunch, toss in some cooked and crumbled bacon or toasted nuts before serving.
