Description

A delicious and hearty Warm Potato Salad with Spring Onion & Mustard Dressing, perfect for any occasion.


Ingredients

  • 2 pounds baby potatoes, halved
  • 1/4 cup olive oil
  • 2 tablespoons Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup spring onions, chopped
  • 1/4 cup fresh parsley, chopped


Instructions

  1. In a large pot, bring salted water to a boil. Add the halved baby potatoes and cook until tender, about 15-20 minutes. Drain and let cool slightly.
  2. While the potatoes are cooking, in a small bowl, whisk together the olive oil, Dijon mustard, apple cider vinegar, honey, salt, and black pepper until well combined.
  3. In a large mixing bowl, combine the warm potatoes with the chopped spring onions and parsley.
  4. Pour the mustard dressing over the potato mixture and gently toss until the potatoes are well coated.
  5. Serve the salad warm, garnished with additional parsley if desired.

Notes

  • For a creamier texture, add 1/4 cup of sour cream or Greek yogurt to the dressing.
