Description

A delicious twist on a classic appetizer featuring creamy whipped feta and blistered tomatoes.


Ingredients

  • 8 ounces feta cheese, crumbled
  • 4 ounces cream cheese, softened
  • 1/4 cup olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1 pint cherry tomatoes
  • 1 tablespoon balsamic vinegar
  • Fresh basil leaves for garnish
  • Salt to taste


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a food processor, combine the crumbled feta cheese, softened cream cheese, 2 tablespoons of olive oil, garlic powder, and black pepper. Blend until smooth and creamy. Taste and add salt if needed.
  3. Transfer the whipped feta to a serving bowl and set aside.
  4. On a baking sheet, toss the cherry tomatoes with the remaining olive oil and balsamic vinegar. Spread them out in a single layer.
  5. Roast the tomatoes in the preheated oven for 15-20 minutes, or until they are blistered and slightly caramelized.
  6. Remove the tomatoes from the oven and let them cool slightly.
  7. Spoon the blistered tomatoes over the whipped feta. Garnish with fresh basil leaves.
  8. Serve immediately with pita chips, crusty bread, or fresh vegetables for dipping.

Notes

  • For a spicy kick, add a pinch of red pepper flakes to the whipped feta mixture.
  • You can substitute the cherry tomatoes with halved grape tomatoes or even diced bell peppers for a different flavor profile.
