- 2 cups heavy cream
- 1 cup milk
- 1 cup granulated sugar
- 6 large egg yolks
- 2 teaspoons vanilla extract
- 1 tablespoon pine syrup
- ½ cup additional sugar for topping
Instructions
- Preheat your oven to 325°F (160°C).
- In a saucepan, combine heavy cream, milk, and sugar over medium heat until the mixture is hot but not boiling.
- In a bowl, whisk together egg yolks, vanilla extract, and pine syrup.
- Slowly pour the hot cream mixture into the egg yolks while whisking continuously to temper the eggs.
- Strain the mixture through a fine mesh sieve into ramekins.
- Place the ramekins in a baking dish and fill the dish with water until it reaches halfway up the sides of the ramekins.
- Bake for 40-45 minutes or until the custard is set.
- Remove from the oven and let cool, then refrigerate for at least 4 hours or overnight.
- Before serving, sprinkle a thin layer of sugar over the top and use a kitchen torch to caramelize the sugar until golden brown.
Notes
- For a more intense pine flavor, use a high-quality pine extract.
- Make sure to let the custard cool completely before adding the sugar topping.
