Description

A deliciously unique recipe for whole roasted fish enveloped in a blanket of rich animal fat, creating a succulent and flavorful dish.

Ingredients

Scale
  • 1 whole fish (your choice, cleaned and scaled)
  • 2 cups animal fat (such as rendered duck or lard)
  • 1 tablespoon salt
  • 1 tablespoon freshly cracked black pepper
  • 1 lemon (sliced)
  • 2 sprigs of fresh herbs (such as thyme or dill)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the cleaned whole fish inside and out with salt and pepper.
  3. Stuff the cavity of the fish with lemon slices and fresh herbs.
  4. In a large oven-safe dish, melt the animal fat over medium heat.
  5. Once melted, carefully place the fish in the dish and cover it completely with the hot fat.
  6. Bake in the preheated oven for 25-30 minutes, or until the fish is cooked through and flakes easily with a fork.
  7. Remove from the oven and let it rest for a few minutes before serving.

Notes

  • For added flavor, you can infuse the animal fat with garlic or other herbs before adding the fish.
  • Serve the fish with a side of roasted vegetables or a fresh salad.
  • Leftover fish can be flaked and added to salads or pasta dishes.
