- 1 whole fish (your choice, cleaned and scaled)
- 2 cups animal fat (such as rendered duck or lard)
- 1 tablespoon salt
- 1 tablespoon freshly cracked black pepper
- 1 lemon (sliced)
- 2 sprigs of fresh herbs (such as thyme or dill)
Instructions
- Preheat your oven to 375°F (190°C).
- Season the cleaned whole fish inside and out with salt and pepper.
- Stuff the cavity of the fish with lemon slices and fresh herbs.
- In a large oven-safe dish, melt the animal fat over medium heat.
- Once melted, carefully place the fish in the dish and cover it completely with the hot fat.
- Bake in the preheated oven for 25-30 minutes, or until the fish is cooked through and flakes easily with a fork.
- Remove from the oven and let it rest for a few minutes before serving.
Notes
- For added flavor, you can infuse the animal fat with garlic or other herbs before adding the fish.
- Serve the fish with a side of roasted vegetables or a fresh salad.
- Leftover fish can be flaked and added to salads or pasta dishes.
