Ingredients

  • 2 pounds wild boar shoulder
  • 4 cups lard
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 4 garlic cloves minced
  • 2 sprigs fresh thyme


Instructions

  1. Preheat oven to 225°F (107°C).
  2. Season the wild boar shoulder with salt and pepper.
  3. In a large, oven-safe pot, melt lard over medium heat.
  4. Add garlic and thyme to the pot.
  5. Place the seasoned wild boar shoulder into the pot, ensuring it’s fully submerged in lard.
  6. Cover the pot and transfer it to the oven.
  7. Cook for approximately 6 to 8 hours, or until the meat is tender and easily pulls apart.
  8. Remove from the oven, let cool, and store in the lard for up to several weeks.
