- 4 cups lard

- 1 teaspoon black pepper
- 4 garlic cloves minced
- 2 sprigs fresh thyme
Instructions
- Preheat oven to 225°F (107°C).
- Season the wild boar shoulder with salt and pepper.
- In a large, oven-safe pot, melt lard over medium heat.
- Add garlic and thyme to the pot.
- Place the seasoned wild boar shoulder into the pot, ensuring it’s fully submerged in lard.
- Cover the pot and transfer it to the oven.
- Cook for approximately 6 to 8 hours, or until the meat is tender and easily pulls apart.
- Remove from the oven, let cool, and store in the lard for up to several weeks.
Notes
- For best results, allow the confit to rest for at least 24 hours before serving to develop flavors.
- Serve with crusty bread or alongside pickled vegetables.
