Ingredients

  • 2 medium sweet potatoes (about 1 pound), peeled and diced
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped green onions
  • 1/4 cup chopped fresh parsley
  • 1 large egg
  • 1/2 cup milk
  • Vegetable oil for frying


Instructions

  1. Begin by boiling the diced sweet potatoes in a pot of salted water for about 15-20 minutes, or until tender. Drain and let cool slightly.
  2. In a large mixing bowl, mash the sweet potatoes until smooth.
  3. Add the flour, baking powder, salt, cumin, paprika, black pepper, green onions, parsley, egg, and milk to the mashed sweet potatoes. Mix until well combined.
  4. Heat about 1 inch of vegetable oil in a large skillet over medium heat.
  5. Once the oil is hot, drop spoonfuls of the fritter mixture into the oil, flattening them slightly with the back of the spoon. Fry in batches, being careful not to overcrowd the pan.
  6. Cook for about 3-4 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels.
  7. Serve warm, garnished with additional parsley if desired.

Notes

  • For a spicier kick, add 1/4 teaspoon of cayenne pepper to the batter.
  • Try substituting half of the all-purpose flour with whole wheat flour for a healthier option.
