Description

Deliciously crispy zucchini fritters that are easy to make and perfect as a snack or side dish.


Ingredients

  • 2 medium zucchinis
  • 1 teaspoon salt
  • 1 cup all-purpose flour
  • 2 eggs
  • 1/2 cup grated parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 cup oil for frying


Instructions

  1. Shred the zucchinis using a grater and place them in a bowl.
  2. Add the salt to the zucchini and let it sit for 10 minutes.
  3. After 10 minutes, drain the excess water from the zucchini.
  4. Add the flour, eggs, parmesan cheese, parsley, black pepper, and garlic powder to the drained zucchini.
  5. Mix until well combined.
  6. Heat oil in a skillet over medium heat.
  7. Spoon the zucchini mixture into the skillet, flattening them slightly.
  8. Cook for about 3-4 minutes on each side, until golden brown.
  9. Remove and drain on paper towels before serving.

Notes

  • For extra flavor, you can add chopped onions or corn to the mixture.
  • Serve with sour cream or yogurt for dipping.
