- 2 medium zucchinis
- 1 teaspoon salt
- 1 cup all-purpose flour
- 2 eggs
- 1/2 cup grated parmesan cheese
- 1/4 cup chopped fresh parsley
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 cup oil for frying
Instructions
- Shred the zucchinis using a grater and place them in a bowl.
- Add the salt to the zucchini and let it sit for 10 minutes.
- After 10 minutes, drain the excess water from the zucchini.
- Add the flour, eggs, parmesan cheese, parsley, black pepper, and garlic powder to the drained zucchini.
- Mix until well combined.
- Heat oil in a skillet over medium heat.
- Spoon the zucchini mixture into the skillet, flattening them slightly.
- Cook for about 3-4 minutes on each side, until golden brown.
- Remove and drain on paper towels before serving.
Notes
- For extra flavor, you can add chopped onions or corn to the mixture.
- Serve with sour cream or yogurt for dipping.
