Description
A fresh and healthy twist on traditional stir-fry using zucchini noodles.
Ingredients

- 2 medium zucchini, spiralized
- 1 cup bell peppers, sliced
- 1 cup carrots, julienned
- 1 cup broccoli florets
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon ginger, grated
- 1 tablespoon sesame seeds
Instructions
- Heat sesame oil in a large skillet over medium heat.
- Add garlic and ginger, sauté for 1 minute.
- Add bell peppers, carrots, and broccoli, stir-fry for 5 minutes.
- Stir in zucchini noodles and soy sauce, cook for another 2-3 minutes.
- Remove from heat, garnish with sesame seeds, and serve.
Notes
- For extra protein, add tofu or chicken.
- This dish can be served hot or cold.
